Rush to Table Smoked Barbecue Chicken Thighs

Even on the weekends, sometimes dinner isn't a carefully orchestrated masterpiece.

Sometimes it's late afternoon, you're behind schedule, the chicken never got its planned dry brine, and supper time is getting closer by the minute.

That's exactly how this cook started.

The goal wasn't perfection. The goal was getting flavorful, smoky barbecue chicken on the table without spending all day tending a smoker. With a smoker tube, a handful of pellets, and a little improvisation, these chicken thighs delivered everything we were looking for: smoke, flavor, and a meal worth gathering around.

What I Learned

Lesson 1
A short smoke session can still bring real flavor when dinner is running behind.
Lesson 2
Crisp the chicken skin before adding barbecue sauce so the glaze caramelizes without softening the texture.
Lesson 3
A smoker tube may keep burning after a quick cook, so have a safe way to extinguish it, like a metal pan with water.
